As a mom of two very busy little boys, I can tell you that I pretty much LIVE on coffee. Taking that first sip in the morning is one of the most satisfying moments of my day. I often even joke that I find all of my parenting skills in that little coffee cup. And if I become a stellar mom after an ordinary cup of coffee, I must become supermom after drinking a latte. But like a lot of busy moms I don’t always have the time (or budget) to stop for that $5.00 Starbucks cinnamon dolce latte. After all, January is the time when a lot of people are still suffering the financial pinch of the holiday spending hangover. So what better time to ditch the $5.00 coffee shop lattes and opt for a much less expensive but equally delicious homemade version.
You don’t have to be a barista to make this DIY homemade cinnamon dolce latte at home. It’s so easy to make and so delicious. Give it a try! I challenge you to say it’s not as satisfying as Starbucks!
Easy Homemade Cinnamon Simple Syrup & Cinnamon Dolce Latte
Yields 3 1/2 cups of simple syrup

If you don't have a milk frother for the last step of this recipe, see here for alternative ways to get frothy milk.
In a small pot add together the water and cinnamon sticks.
Bring to a boil and simmer for 10 minutes.
Strain out cinnamon sticks and any smaller cinnamon stick pieces that might have broken off during boiling. Bring water back to a boil, add sugar and stir until sugar is dissolved.
Store the cinnamon dolce latte syrup in a sealed glass bottle in a refrigerator. When refrigerated it should keep for up to 1 month.
Brew either 3/4 cup of strong coffee or 1/4 cup of espresso in a large cup. (I'm lucky because our new Keurig Elite coffee machine has a strong setting, which I find perfect for lattes). Depending on how sweet you like your lattes, add 1 - 2 tablespoons of the cinnamon dolce latte simple syrup to the coffee.
heat milk in either a small pot on the stove or in the microwave for a minute or two. Make sure that the milk does not come to a boil. Froth milk (I use a handheld milk frother as pictured below and I find it works great!) Add frothed milk to coffee.
Sprinkle with powdered cinnamon as a garnish if you wish and enjoy!

I love how just like at a coffee shop I can customize my latte. I can tailor it to my desired sweetness and taste, and use my own milk preferences. Ever since I’ve started to make this recipe, it has definitely become one of my favourite afternoon treats.
